This is our special thread just for fish rubs. If you are a cook you will know what a rub is. If you don't know, then a rub is a special group of seasonings that you will "Rub" or massage into your particular piece of fish just before cooking. Please feel free to include any recipes that you may have here.
Use to flavor fish. 2 teaspoons aniseed, crushed 2 teaspoons freshly ground pepper 2 teaspoons fennel seeds, crushed 2 teaspoons ground cloves 2 teaspoons ground cinnamon 1 1/2 teaspoons ground ginger 1/2 teaspoon ground allspice Combine all ingredients; store in an airtight container. Makes 1/4 cup.
1 tablespoon ground bay leaves 2 1/2 teaspoons celery salt 1 1/2 teaspoons dry mustard 1 1/2 teaspoons black pepper 3/4 teaspoon ground nutmeg 1/2 teaspoon ground cloves 1/2 teaspoon ground ginger 1/2 teaspoon paprika 1/2 teaspoon red pepper 1/4 teaspoon ground mace (optional) 1/4 teaspoon ground cardamom (optional) Combine all ingredients; store in an airtight containers. Makes 1/4 cup.
1 c Paprika 1/4 c Onion Powder 1/8 ts Cayenne 1/2 ts White Pepper 2 ts Chili Powder 3 tb Brown Sugar 1/2 c Granulated Sugar 1 ts Curry Powder 1/2 ts Black Pepper 1/4 c Salt This seasoning rub can be used on all types of fish. Dust the fish before grilling or smoking.
8 teaspoons paprika 2 teaspoons cumin 2 teaspoons sugar 2 teaspoons chili powder 2 teaspoons salt 2 teaspoons pepper 1 teaspoon cloves cayenne pepper, to taste 1. Combine all ingredients and use as a rub for firm white fish such as Chilean sea bass or orange roughy, or also wonderful with salmon. 2. Grill, broil, bake or pan-fry fish as usual.
