Recipe For Lemon Lime Cheesecake 2 lemons 2 limes 350g cream cheese 175g double cream (heavy cream) 100g sugar 300g ginger biscuits (cookies) 150g butter Crush your biscuits until like a fine crumbs. Melt your butter. Mix with the biscuits. Add to the cake tin and wait for the biscuit mixture to set. To make the filling: Zest and juice, the lemons, and the limes. Mix the cream cheese, sugar, cream, and the juice, and rind together until thick. Add the mix to the top of the biscuit base and leave in the fridge for 2 to 4 hours, or until set. Enjoy.
